High Protein Mac and Cheese
This easy 10-minute recipe makes two protein-packed wraps that are perfect for lunch or dinner. Made with a creamy cottage cheese and tuna mix, fresh tomato, red onion, sliced avocado, and melty Monterey Jack, all wrapped in a high-protein tortilla. Quick to make and seriously satisfying. Don't worry it's not super spicy, the spice level is about a 1/10!

Ingredients
- 1/2 box Barilla Protein+ Penne (4oz dry)
- 1/2 tbsp dijon
- 1 tsp salt, garlic powder, onion powder
- 2 cups low sodium bone broth
- 1/2 cup low fat cottage cheese
- 1/2 cup low-calorie cheddar cheese
- 2 tbsp nutritional yeast
Steps to Make
- In a blender, blend your cottage cheese, dijon, and seasonings until smooth with no clumps
- Add to a pot on low heat and mix in your cheddar cheese
- Add 2 cups bone broth and 2 cups water to a pot
- Boil your noodles in them for 8 minutes or until al dente
- Drain noodles and combine with cheese sauce
